Here, the Coffee Has a Family Name

You sit near the bar, and the ritual begins. The barista sets the filter, measures the coffee, and slowly pours the water as the aroma starts to rise. SISU belongs to Lamastus Family Estates, a coffee-producing family with roots dating back to 1918 and estates such as Elida Estate. That makes drinking a Geisha pour-over here feel different: you are not tasting a bean brought in simply to fill out a menu, but coffee connected directly to the family’s own farms.

They also offer tastings where different varieties, processes, and profiles can be compared, including Geisha. The space mirrors that same precision. Exposed brick, concrete, light wood, and an open bar make watching the barista work part of the experience. Geisha can taste floral, fruity, and delicate—very different from the dark, bitter cup many travelers imagine when they think of traditional coffee.

When Coffee Finds Its Way onto the Plate

At SISU, coffee does not always stay inside the cup. The menu, originally developed in collaboration with chef Ariel Zebede, plays with it in the food as well. You might find a coffee-smoked brisket sandwich, while the pastry case offers coffee rolls, chocolate-and-coffee cookies, canelés, and other baked treats. If you are in the mood for something savory, there are options such as a breakfast sandwich, brioche grilled cheese, shakshuka, and shawarma. And if you are not sure where to begin, asking questions makes sense here. The baristas can guide you through brewing methods, coffee varieties, and flavor profiles, and recent visitors often highlight both the quality of the coffee and the knowledge of the team.

SISU is not simply a place to grab “a quick coffee” before continuing your walk. It is one of those spots where you may walk in thinking about caffeine and leave understanding how a cup of Panamanian coffee can tell a story about farms, altitude, process, family, and place. In the heart of Casco Antiguo, Panama is not only outside the window—it is also inside the cup.
